Crafted from 20-year-old Chenin vines, this wine thrives on a soil of schistose sandstone and is produced with a controlled yield of 28 Hl/Ha. Harvesting is done manually, and pressing is gentle to preserve fruit integrity. Thanks to fermentation in new oak barrels followed by 12 months of aging, this wine is distinguished by its dense texture and elegant aromas, with no added sulfites for a pure expression of its terroir.

At first glance, its golden and slightly hazy hue is captivating. On the nose, subtle notes of ripe white fruits intertwine with toasted aromas from aging, indicating remarkable complexity. The palate reveals a luscious and invigorating texture, thanks to a delicate natural effervescence. The texture is surprisingly textural and gives way to significant aromatic freshness, while the finish unfolds with citrus notes and subtle noble bitterness. This wine is an absolute delight with Loire fish in sauce or creamy white meats.

In Anjou, the Vaillant family has been managing Domaine Les Grandes Vignes biodynamically for many years. The vineyard is primarily planted with Chenin and Cabernet Franc, emblematic grape varieties of the region, cultivated with constant attention to soil balance and vine vitality.

The parcels located around Thouarcé exhibit diverse profiles, which the estate interprets through precise vinification techniques, sometimes conducted without added sulfur.
