Chenin JL Denois 2022

Haute Vallée De L'Aude | Blanc | 2022

This wine, made without added sulfites, is distinguished by its origins in the clay-rich terroir of the Upper Aude Valley and is made from 100% Chenin Blanc. The vineyard is in its second year of conversion to organic farming, with a careful hand-harvest. The winemaking process involves whole-cluster pressing and partial barrel fermentation, without the addition of sulfites, resulting in a wine of remarkable purity.

Our Review of the Cuvée

Visually, its golden hue with a hint of pink is irresistibly eye-catching. The nose immediately releases powerful aromas of baked apple, quince, and marzipan. On the palate, this wine is both full-bodied and light, revealing a rich structure enhanced by notes of quince jelly and spices. A subtle effervescence brings aromatic freshness with hints of candied lemon and orange peel. The finish is marked by beautiful intensity, combining lively acidity, elegant lemon astringency, and the delicate bitterness of pomelo peel. A tasting experience that promises rich and complex sensations.

Languedoc | France

Following extensive experience with Champagne methods, Jean-Louis Denois identified favorable conditions for cultivating Pinot Noir and Chardonnay in certain Languedoc hillsides. Altitude, aspect, and soil composition here provide an ideal environment for the expression of these grape varieties, which are rarely associated with the region.

Vinification favors a measured approach, focusing on freshness and aromatic precision rather than pursuing power. White wines retain a distinct tension, supported by subtle mineral expressions, while reds are crafted with gentle extractions, yielding fine and well-integrated tannins.

Aging processes remain restrained and tailored to each cuvée, aiming to support the wine without dictating its profile. Overall, this offers a balanced and coherent interpretation of these Languedoc terroirs, emphasizing accuracy and clarity rather than a demonstrative approach.
