The vines, which are over 30 years old, thrive on clay-limestone slopes, providing the Sauvignon Blanc with an exceptional terroir. Harvested by hand, the grapes are carefully sorted and vinified using native yeasts in temperature-controlled tanks, ensuring the wine’s freshness and expressiveness. The biodynamic approach, certified by the Biodyvin label, reinforces the authenticity and transparency of this natural wine.

Our Review of the Cuvée

On the nose, this Sauvignon Blanc reveals lively aromas of citrus and white flowers, accompanied by subtle mineral notes. On the palate, it offers an elegant texture with lovely acidity that highlights its freshness. The aromatic complexity continues with delicate herbaceous notes and a lingering finish, marked by a pleasant salinity. The vines, over 30 years old and cultivated biodynamically, bring depth and character to this wine, in perfect harmony with its Kimmeridgian clay-limestone terroir.

Located in Menetou-Salon, Domaine Philippe Gilbert is part of a long family tradition in winemaking, as the Gilbert family has been involved in viticulture since the 18th century. Today, the estate is run by Philippe Gilbert, who oversees a vineyard of approximately 29 hectares.

The vineyard is planted primarily with Sauvignon Blanc and Pinot Noir, the appellation’s signature grape varieties, which are cultivated with a constant focus on balance and clarity.

The estate transitioned to organic farming and then to biodynamic farming between 2005 and 2007, and is now Biodyvin-certified. This approach involves meticulous vineyard management, focused on soil vitality and close observation of the vines. The winemaking process aims to respect the natural rhythm of the wines, with extended aging—approximately one year for ... Read more
