The La Côte cuvée comes from the chalky terroir of Chavignol (La Grande Côte), where the old vines are cultivated organically and tended by hand. The wine is made using natural winemaking methods with indigenous yeasts, fermented and aged in large oak casks and old stainless-steel tanks without the use of new wood. The result is a dry, precise, and mineral-driven Sancerre that combines density, briny tension, and elegant clarity.

Our Review of the Cuvée

The nose is marked by notes of lime zest, white grapefruit, white flowers, and mineral hints reminiscent of oyster shells or damp stone. On the palate, the attack is lively and dynamic, with concentrated body yet imbued with delicacy. The saline tension is powerful, leading to a long, linear, chalky finish. Vibrant acidity underpins the whole, with a sensation of fresh sap. This Sancerre, built on the purity of the soil, pairs wonderfully with seafood, sashimi, or goat cheese, while offering a refined and approachable character.

Boulay's signature is evident in the precision of the Sauvignon from Chavignol's "terres blanches" and "caillottes." The wines display ripe yet restrained fruit, a tapered structure, and the salinity characteristic of the finest Sancerre wines.
