Brice Omont has carefully selected grapes grown using organic methods or in the process of conversion to organic farming. The winemaking process begins with whole-cluster maceration using naturally occurring yeasts. Aging takes place in a carefully orchestrated combination of concrete and stainless steel tanks and neutral barrels, allowing the wine to develop beautiful aromatic complexity while preserving the purity of the Mondeuse grape variety.

Take a deep sniff of this wine and you’ll be greeted by deep aromas, subtly evoking red fruits with a delicate hint of spice. On the palate, the attack is clean and reveals a silky texture. The perfect balance between acidity and structure brings out a range of flavors ranging from black cherry to earthier notes, typical of Mondeuse. The finish is clean and lingering, leaving an impression of freshness and sophistication that invites you to come back for more.
