Our Review of the Cuvée

This wine has a beautiful pale yellow color and offers a captivating bouquet with notes of exotic fruits such as pineapple and passion fruit. In Entre-deux-Mers, Domaine Chibaou—“horse” in Gascon dialect—was founded when Christophe Rebillou returned to the family’s 5 hectares, which had been transferred to the cooperative winery. In 2005, he left the cooperative and produced his first vintage. Today, 70 hectares cultivated using biodynamic methods (uncertified) around three historic châteaux—Grenet, Beyran, and Fontaine Fleury—form a cohesive and vibrant whole.

A pioneer of organic farming in Entre-deux-Mers since 2009, Christophe integrates horseback riding and biodiversity into the estate’s daily life; the estate’s very name pays homage to the family’s passion for horses. An estate with a sincere commitment and limited production that is not to be missed.
