Located in Jouques, north of the Coteaux d'Aix-en-Provence appellation, Domaine de la Mongestine is farmed organically and biodynamically. The vineyard is situated on a high plateau, in a cool environment for Provence, characterized by significant temperature variations between day and night.

The predominantly clay-limestone soils, combined with the altitude and influence of the winds, promote gradual ripening and naturally taut balances. The estate cultivates a range of Mediterranean grape varieties, adapted to this cooler climate, with particular attention paid to preserving freshness and expressing the wines clearly.

The winemaking process is carried out with restraint, favoring gentle extractions and discreet aging, so as not to mask the identity of the grapes. The wines are distinguished by their straightforward and balanced profiles, far removed from the sun-drenched expressions often associated with the region, with a precise structure and a beautiful finish.
