Anecdotes from the Estate: Human beings are impatient by nature. Making a good wine requires patience. You have to let time take its course. At Domaine des Closeaux, this means between 18 and 20 months of aging! A Little History of the Estate: Through my professional and personal journey, I have learned a great deal during my tastings and, as a restaurateur/sommelier, during my visits to various estates over 30 years. Today, I translate the fruits of this experience into the quality of the wines I produce. While I am not involved in viticulture myself, I have chosen to surround myself with loyal winegrowers who understand my expectations, my specifications, and my philosophy. This goes beyond simply buying the grapes I transform into wine. I have a profound approach, close to my terroirs and the people who cultivate this precious raw material, to whom I owe the best possible winemaking experience as a way of thanking them for their work. The pride of Domaine Jacques Bavard is a new generation of Burgundy winemakers, located in the commune of Puligny-Montrachet. We took over the family estate in 2003 and completely restored and renovated it. The last harvest took place in 1976. Today, we are beginning our 12th vintage. The wines come from plots cultivated using sustainable or organic methods. We select and purchase the grapes according to strict specifications and carry out the harvest, vinification, aging, and bottling on the estate. We use indigenous yeasts, and there is no lees stirring or filtration. For 30 years, I was a restaurateur in Paris, at Le Bourguignon du Marais in the 4th arrondissement, specializing primarily in Burgundy, where I bought, stored, served, and tasted everything Burgundy has to offer, directly from the vineyards. Two years of study in 1990/1991 at the Beaune wine school, and five years of working in biodynamic viticulture on the family estate in Puligny. Today, a suite of guest accommodations welcomes you to the estate, as well as a tasting table if you visit us.
