The 2025 Les Terres Salées en Blanc (Château Bouisset - Christophe Barbier) is a rare treasure from a unique plot in Fleury d'Aude, cultivated on the site of a former salt marsh. These ungrafted vines, around fifty years old, benefit from an exceptional environment that is inhospitable to phylloxera. Aged in barrels, this 100% Bourboulenc reveals a brilliant pale yellow color, offering a balance between freshness and aromatic richness, finishing with a noble and lingering bitterness.
