The nose is delicate and fresh, with aromas of candied lemon zest, grapefruit, and damp chalk. The palate is vibrant, captivating you with its freshness from the first sip, before unfolding into a round, airy, finely pulpy texture, dotted with thousands of micro-bubbles that lend a creamy feel.

In Alsace, Domaine Neumeyer is located around Molsheim, as well as in the neighboring towns of Mutzig and Avolsheim. The vineyard is managed according to the principles of organic farming, with particular attention paid to soil balance and the expression of each plot.

Vineyard work relies on measured practices: natural ground cover, shallow soil cultivation, manual harvesting with sorting, and controlled yields. The grapes are harvested at optimal ripeness to preserve the perfect balance and aromatic potential of each plot.

In the cellar, winemaking prioritizes minimal intervention. Pressing is gentle, fermentation is carried out with indigenous yeasts, and aging is extended on the lees to promote the stability and natural complexity of the wines. This approach aims to complement the raw materials without altering their expression.
