Bourboulenc de La Clape, planted on clay-siliceous soils shaped by a past as salt marshes, offers a unique experience thanks to its sustainable cultivation. These 40-year-old vines are pruned using the Royat method, and approximately 4,000 vines per hectare ensure optimal quality. Vinification begins with gentle pressing and continues with a carefully orchestrated fermentation, taking place in both tanks and new American oak barrels, before aging on the lees.
