Barbara and Pierre, passionate about oenology, created Domaine SIBILLE, a 15-hectare organic vineyard in the Minervois region. With a variety of grape varieties such as Viognier, Syrah, and Grenache, they produce authentic and original wines that reflect the expressive terroir of the area. The sandstone soil brings freshness and structure, while hand-harvesting and aging on the lees result in rich and complex wines. Our opinion on the vintage

This wine has a beautiful pale yellow color with green highlights. On the nose, intense notes of fresh fruit emerge. On the palate, the attack is fresh and balanced, offering a pleasant sensation on the finish. Perfect to accompany fish, hard cheeses, shellfish, or dishes made with goat cheese and basil. Serve at 8°C to fully appreciate its flavors.

Domaine Sibille was established in December 2015 when Barbara and Pierre left their native Alsace to settle in Laure-Minervois, at the foot of the Minervois hills. The estate, farmed organically, covers just over 15 hectares, including 5 hectares in the Minervois AOP and 10 hectares in the IGP. Surrounded by garrigue and pine forests, the vines grow primarily in sandstone soils, which impart freshness and structure to the wines, while the Viognier and Chardonnay are planted in clay-limestone soils. Pierre, an oenologist for over twenty years, crafts authentic wines, favoring hand-harvesting for the reds, gravity-flow winemaking, sulfite reduction, and aging on the lees for the whites. The estate cultivates, among others, Grenache, Carignan, Syrah, Mourvèdre, Viognier, and Chardonnay. True to its philosophy of sharing, Domaine Sibille was also designed as a place for exchange and hospitality, open to the distinctive landscapes of the Minervois.
