This wine, made exclusively from the Côt grape variety, comes from vines cultivated in clay-siliceous soils resting on a limestone base, thus imparting a beautiful minerality. The harvest is entirely done by hand, allowing for meticulous selection of the bunches. Vinification includes maceration with whole bunches, and malolactic fermentation is fully completed. Aging in tanks respects the authenticity of the fruit, and the use of sulfites is very limited.
