This Sauvignon Blanc is the product of organic farming in conversion to biodynamic practices. The vineyard, situated on clay-siliceous soil, benefits from a Mediterranean climate with a northern exposure, ensuring optimal ripening of the grapes. Vinification without sulfur, including direct pressing and cold aging on lees, reveals a pure and authentic expression of the grape variety. The pale gold color and crystalline style attest to remarkable precision.

On the nose, it's a festival of freshness with notes of candied lemon, damp chalk, and a light touch of sea air. From the first sip, the palate bursts with vibrant energy, reminiscent of a spring stream. Flavors of green apple and lemon intertwine with saline and mineral nuances, amplified by a delicate effervescence that accentuates its crispness. The finish, dynamic and characteristic, reveals a grapefruit bitterness, a lemon pulp acidity, and a chalky astringency, lingering with hints of candied lemon and quinine. A tasting experience that stands out for its structure and refined nuances.
