This cuvée is made from pure Syrah grapes, sourced from old, certified organic vines, carefully trellised and hand-harvested to ensure optimal quality. The winemaking process prioritizes gentleness, with meticulous destemming and no crushing, leaving the berries whole in the vat. Six months of aging in oak barrels refines the tannins, followed by bottling in our cellars in Limoux, guaranteeing a final product of exceptional quality.

After an experience steeped in Champagne-style winemaking, Jean-Louis Denois identified favorable conditions for growing Pinot Noir and Chardonnay on certain hillsides of Languedoc. Altitude, exposure, and soil type provide an environment conducive to the expression of these grape varieties, rarely associated with the region.

The winemaking process favors a measured approach, focused on freshness and aromatic precision rather than the pursuit of power. The white wines retain a marked tension, supported by discreet mineral expressions, while the reds are built on gentle extractions, resulting in fine and well-integrated tannins.
