This wine is made entirely from Cinsault grapes, grown on gravelly and sandy soils bordering the Capestang lagoon, in a favorable Mediterranean climate. The grapes are harvested at night to ensure their freshness, followed by direct pressing and controlled fermentation. A small portion of the blend undergoes malolactic fermentation, adding complexity. Aging on the lees for two months imparts a smooth texture. This wine is ideal with fish, grilled meats, or white meats.
