Our Review of the Cuvée

This Chinon has a ruby color with purple highlights. On the nose, you’ll discover aromas of slightly smoky black fruits, adding a touch of indulgence. On the palate, the texture is supple and juicy, with a light acidity that awakens the taste buds. The crisp tannins give way to peppery notes on the finish. Perfect for pairing with an aperitif or a platter of cold cuts and cheeses.

The Domaine du Saut au Loup is the career-change project of Éric Santier, a globetrotter from Chinon who, after years in the export business and in Dubai, returned to Chinon in his forties to become a winemaker. This return to his roots—in Ligré, on the left bank of the Vienne River—is a story of conviction as much as it is one of passion.

14 hectares in a single block, facing south and southeast, on clay-siliceous soil at higher elevations and clay-limestone soil at the base of the hillsides. The estate, which had been owned by the Dozon family for five generations before they took it over in 2013, is now moving upmarket with new investments. An authentic Chinon producer to watch closely.
