The winemaking process for this wine is based on an authentic and respectful approach to the grapes. The Pinot Noir, grown in Burgundy on clay-limestone soils, benefits from organic farming practices. The grapes are destemmed upon arrival at the winery, and fermentation is spontaneous, supported by indigenous yeasts. Thanks to meticulous punch-downs and pump-overs, aging in Burgundy barrels imparts a delicate structure to the wines.
