This wine, produced by Pierre Ménard in the Clos des Mailles terroir, comes from vines cultivated organically using manual and natural techniques. The Chenin vines, planted primarily in 1993, benefit from a soil of schist and chert. The harvest is done by hand, followed by gentle pressing. The wine is then fermented and aged in a variety of barrels, as well as in large oak casks and stoneware jars, to achieve remarkable complexity and balance.
