Domaine de l'Enclos spans 29 hectares, with 6 hectares certified organic and the remainder in conversion. Located in the heart of Chablis, the estate boasts a state-of-the-art gravity-flow winery where each plot is vinified separately. Vinification uses only indigenous yeasts, without any oenological additives, thus preserving the wine's natural purity. This meticulous work in the vineyards and cellars guarantees wines of remarkable freshness and subtle sophistication.

Our opinion on the vintage

The 1er Cru Vau de Vey captivates with its perfect balance. On the nose, delicate notes of white flowers and fresh fruit intertwine harmoniously. On the palate, its velvety texture is counterbalanced by a marked vivacity, typical of the terroir. Complexity is expressed through mineral nuances and a subtle touch of citrus, offering a long and elegant finish. A wine that charms with its depth and the precision of its expression, reflecting the meticulous attention paid to each stage of its creation.

The Robelin brothers approach Chablis with a modern, rustic sensibility, focused on soil health and the impact of organic farming. Their wines offer a perfect ripeness, never excessive, with the taut structure characteristic of Chardonnay grown on Kimmeridgian marl. Long fermentations and aging in large oak casks result in fine, lightweight textures that gradually open up to notes of ripe citrus and damp chalk. The single-vineyard wines display an even more structured expression, highlighting the limestone ridges of the Enclos.
