Coteaux de Narbonne et Terres de Pérignan | Red | 2023

This Merlot, approximately fifty years old, is cultivated on a unique terroir, a former salt marsh, offering the vines exceptional conditions. Thanks to the absence of rootstock, the roots have penetrated deeply, ensuring uniform ripening. Winemaking emphasizes quality, with extraction by punching down the cap to obtain the finest tannins. Aging in barrels for several months infuses the wine with aromas while adding a subtle oaky touch to the natural saline notes.

Our opinion on the vintage

From the first whiff, this Merlot reveals a seductive complexity, marked by enveloping woody aromas and an unexpected maritime freshness. On the palate, it unveils a velvety texture, where the tannins are present but delicately polished. The saline minerality adds a surprising dimension, making each sip both rich and balanced. The carefully controlled aging in new oak barrels brings a woody depth that integrates perfectly with the long, mouthwatering finish. Best enjoyed slowly, ideally with a grilled ribeye steak, to fully appreciate its potential.

Château Bouisset

Languedoc | France

On the limestone soils of La Clape, Château Bouisset cultivates Syrah and Mourvèdre with the aim of producing full-bodied yet structured reds. The sea breeze brings a welcome freshness that tightens the juice and softens the natural power of the terroir. The wines display generous dark fruit, a spicy character, and a broad yet disciplined texture. The aging process, carefully managed, supports the wines without making them harsh. This estate clearly showcases the unique character of this windswept Mediterranean plateau.
