This wine is distinguished by its artisanal winemaking method, where the grapes, hand-picked at peak ripeness, undergo gentle pressing. The slow, spontaneous fermentation in oak barrels at least 10 years old, along with aging on fine lees and bâtonnage (lees stirring), highlights the complexity and finesse of this Champagne. The absence of malolactic fermentation preserves a vibrant freshness, and the solera-inspired blending ensures remarkable depth and consistency.

Les 7 Cépages is a unique extra brut champagne made from the seven grape varieties permitted in Champagne: Chardonnay, Pinot Meunier, Pinot Blanc, Petit Meslier, Arbane, Pinot Noir and Fromenteau. This wine, from a single plot planted in 2003, has been aged using the solera method since 2005.
