Our Review of the Cuvée

This is somewhat the 'atypical' one among our champagnes. Crafted using a technique rarely employed in Champagne production, the grapes are destemmed and macerated for several days to achieve a color and aromas that make it a unique wine. This champagne is produced only in the best vintages. On the wine side, it presents a ruby hue. Powerful aromas revealing notes of strawberries, raspberries, and blackcurrants.

The vocation of winemaker became apparent to him very early on. Olivier grew up in the vineyards, accompanying his parents and grandparents, then trained at the Avize viticultural high school before gaining extensive experience across various estates. This trajectory now informs a thoughtful approach, rooted in tradition and keen observation.

The estate's history began in the 1950s when his grandfather developed a vine nursery business, grafting his own rootstocks before planting the first family plots.
