Pays D'Hérault | Orange | 2019

This innovative blend of Riesling (75%), Clairette, Viognier, Petit Manseng, and Petite Arvine creates a captivating wine, crafted using a traditional and meticulous winemaking method. The grapes are harvested by hand, then fermented together with native yeasts in an underground amphora. This chemical-free process, followed by an 11-month maceration, expresses the purity and authenticity of the grape varieties. Production is limited, ensuring exceptional care at every stage.

Our Review of the Cuvée

The nose offers beautiful complexity, with notes of bitter orange peel, dried mandarin, and a hint of candied angelica. On the palate, it delivers a silky smoothness with an enveloping aromatic intensity. The subtle tannins derived from maceration provide a delicately structured texture. The finish, rich in candied citrus, offers a seductive and memorable length.

In the Cévennes foothills, Clovallon Estate operates at high altitude, which fundamentally alters the viticultural approach: resulting in slow maturation, refined aromatics, and natural freshness. The red wines exhibit an unexpected elegance. The white wines possess a supple energy. A style almost reminiscent of mountain wines in the Languedoc region.
