Vin de France | Blanc | 2024

A 100% Chardonnay white wine certified organic, aged for four months on fine lees in stainless steel tanks, Le Gypse reflects the mineral terroir of the Montagne Noire (Minervois-La Livinière). The name highlights the bright finish, typical of gypsum and limestone soils. With beautiful purity, it offers a balanced texture, a saline tension, and remarkable aromatic precision.

Our Review of the Cuvée

On the nose, aromas of ripe citrus (lemon and blood orange zest), underscored by notes of flint, graphite, and a hint of white flowers. On the palate, the attack is clean and crisp, the texture fluid yet firm, with a limestone minerality that brings salinity and freshness. The finish is pure, long-lasting, and elegant. A lively, distinguished white—both bright and precise—that pairs beautifully with shellfish or grilled fish.

Languedoc | France

Syrah dominates here without overpowering the other elements: in Minervois, Michel Escande has patiently crafted a style that is ample yet never massive. The old vines, rooted in the limestone hillsides, yield juices that reveal a tight grain, consistent depth, and an unexpected freshness. Extended aging refines the contours while preserving a natural spicy character. A short sentence. The estate embodies a certain Languedoc classicism, but a vibrant, thoughtful classicism, focused on precision rather than raw power.
