After gaining experience with traditional Champagne winemaking methods, Jean-Louis Denois identified certain hillsides in the Languedoc as having conditions favorable to the cultivation of Pinot Noir and Chardonnay. The altitude, exposure, and soil composition here provide an ideal setting for these grape varieties—rarely associated with the region—to flourish.

The winemaking process emphasizes a restrained approach, focusing on freshness and aromatic precision rather than sheer power.
