Upon opening, this naturally sparkling wine surprises with its captivating aroma, blending candied red berries and mild spices. On the palate, its roundness and fullness unfold with an invigorating freshness, enlivened by a myriad of micro-bubbles. Raspberry takes center stage with irresistible intensity, complemented by notes of white pepper. The finish, slightly chalky and pleasantly bitter, evokes candied orange peel and a hint of cinchona, while the raspberry remains dominant, lively, and invigorating right through to the final note.

After gaining experience with traditional Champagne winemaking methods, Jean-Louis Denois identified certain hillsides in the Languedoc as having conditions favorable to the cultivation of Pinot Noir and Chardonnay. The altitude, exposure, and soil composition here provide an ideal setting for these grape varieties—rarely associated with the region—to flourish.

The winemaking process emphasizes a restrained approach, focusing on freshness and aromatic precision rather than sheer power. The white wines retain a distinct liveliness, underpinned by subtle mineral notes, while the reds are crafted through gentle extraction, resulting in fine, well-integrated tannins.
