Tradition Extra Brut

Crémant de Limoux | White | NM

A sparkling wine from Limoux, produced using the traditional method with a balanced blend of Pinot Noir and Chardonnay. The whole grapes are carefully pressed to obtain high-quality cuvée juices, which are partially fermented in oak barrels and aged on the lees for three years. The unique terroir of Limoux, enhanced by its favorable climate, ensures a perfect balance between acidity and fruitiness, with a very light dosage of sugar.

Our take on this vintage

Upon opening, the nose is pleasantly surprised by subtle aromas of white-fleshed fruits and light toasty notes. On the palate, a fine, persistent effervescence envelops the mouth, revealing delicate flavors where notes of apple and pear blend elegantly. The texture is silky, with a distinct acidity that brings a sensation of freshness and liveliness. Aging on the lees imparts beautiful complexity and a long, refined finish. An ideal companion for a refined aperitif or to pair with seafood dishes.

Languedoc | France

After gaining experience with traditional Champagne winemaking methods, Jean-Louis Denois identified certain hillsides in the Languedoc as having conditions favorable to the cultivation of Pinot Noir and Chardonnay. The altitude, exposure, and soil composition here provide an ideal setting for these grape varieties—rarely associated with the region—to flourish.

The winemaking process emphasizes a restrained approach, focusing on freshness and aromatic precision rather than sheer power. The white wines retain a distinct liveliness, underpinned by subtle mineral notes, while the reds are crafted through gentle extraction, resulting in fine, well-integrated tannins.

The winemaking process remains understated and tailored to each vintage, with the aim of supporting the wine without dictating its character. The collection offers a balanced and coherent expression of these Languedoc terroirs, emphasizing precision and clarity rather than a showy interpretation.
