This wine is made from 100% Riesling grapes, grown on sandy-clay soil using organic farming methods. The winemaking process involves direct pressing, followed by fermentation in tanks without the addition of sulfur, using native yeasts. Aging on the lees for 18 months in barrels imparts a subtle and complex structure. This wine pairs perfectly with everything from aperitifs to seafood dishes and desserts such as lemon tart.
