Xibalba 2024

Vin de France | Blanc | 2024

This wine is made from old Grenache Noir vines cultivated using biodynamic methods and harvested by hand. It is vinified without additives (with just a few milligrams of sulfites added at the end of fermentation), featuring gentle pressing and short maceration. The wine is crystal-clear and fresh, with lively acidity and delicate floral and fruity aromas. A light, refined, and easy-drinking “white from black” wine with a pure expression.

Our Review of the Cuvée

The color is light, with a pale gold hue tinged with amber, a subtle reflection of the Grenache Noir vinified as a white wine. On the nose, there are floral notes (white flowers, sweet honey) and white-fleshed fruits: pear, ripe peach. The profile lingers with a zesty, lemony acidity and a pronounced briny freshness. On the palate, the texture is fluid and vibrant, carried by a lively acidity. The finish is clean, airy, and persistent, featuring refreshing citrus notes and a delicate salinity. A balanced, expressive, and easy-drinking wine, perfect as an aperitif or paired with grilled fish or summer salads.
