The wines of Laurence and Rémi Dufaitre stand out for their authentic approach to Beaujolais. Rémi Dufaitre, a proponent of carbonic maceration, works in accordance with local traditions while adopting organic practices. He uses indigenous yeasts for fermentation and adds sulfur only when necessary to stabilize his wines. Their aging processes vary, ensuring a unique character for each wine. These wines are a true invitation to discover the richness of the Brouilly terroir and the surrounding vineyards.

Our Review of the Cuvée

At first glance, its translucent ruby color captivates with its elegance. On the nose, it offers a delicate yet intense bouquet of violets, morello cherries, and raspberries, with a subtle smoky note and soft spices. On the palate, one savors a round, velvety, and airy texture that highlights pure, vibrant fruit, enhanced by a smoky touch. The finish, with its invigorating freshness, reveals delicate tannins that prolong the pleasure with lingering notes of morello cherry, cherry pit, and violet. It is a wine with a harmoniously balanced structure, leaving a lasting and refined impression.

In Saint-Étienne-des-Ouillères, in the heart of the Beaujolais region, Laurence and Rémi Dufaitre have been running their estate as an organic vineyard since 2006. The vineyards, spread across Brouilly and neighboring appellations, are tended with constant attention to the soil and the balance of each plot. The setting is simple, rural, and unpretentious—much like the wines produced here.

The estate’s operations are built on a true synergy. Rémi, who is deeply involved in technical decisions and winemaking, raises the bar for quality and precision. Laurence, who is just as hands-on, ensures continuity in the work and manages day-to-day operations. Together, they are gradually upgrading the production facilities, notably with the arrival of a new winery in 2020, designed to enhance functionality without losing the artisanal spirit.

The winemaking process follows Beaujolais tradition, featuring carefully controlled carbonic maceration. Aging varies depending on the cuvée and vintage, always with the aim of complementing the wine rather than ... Read more
