This 35-hectare estate, nestled in the heart of the Malepère massif, has exclusively cultivated Merlot using organic farming practices since 2013. The terroir, situated between 250 and 400 meters above sea level, benefits from a dual Atlantic and Mediterranean influence, imparting aromatic suppleness to the wines. Cold pre-fermentation, followed by a short maceration, preserves the aromas, resulting in a gourmet, approachable wine with low sulfite content.

Our Review of the Cuvée

From the first glance, its deep garnet hue invites discovery. The nose immediately captivates with aromas of candied raspberry and blackberry, enhanced by notes of violet and a hint of spice. On the palate, a fine, velvety texture extends elegantly, while ripe fruit flavors delicately intertwine with mentholated and balsamic nuances. This Merlot presents a profile that is both crisp and charmingly audacious, delivering a savory finish where cherry, cocoa, and mint intertwine. An easy-drinking wine, perfect for pairing with duck confit or cassoulet.

Located in Malviès, between Limoux and Carcassonne, Château Guilhem has been a family estate since 1878, currently managed by the fifth generation. The domain encompasses approximately 35 hectares of organically cultivated vineyards, clustered around the property and situated against the Malepère massif, in the western Languedoc.

This sector clearly distinguishes itself from the rest of the region by its cooler climatic influence, linked to the proximity of the Pyrenees. This particularity is reflected in the estate's varietal composition, intentionally featuring Atlantic-inspired grape varieties: Merlot, Cabernets, and Malbec. This choice bestows upon the wines a unique profile within the Languedoc terroir, often referred to as 'another Languedoc,' where freshness and structure are prioritized over solar intensity.
