This wine, made exclusively from the Côt grape variety, comes from vines grown on siliceous-clay soils resting on a limestone base, which lends it a lovely minerality. The grapes are harvested entirely by hand, allowing for a meticulous selection of the clusters. The winemaking process includes maceration with whole clusters, and malolactic fermentation is carried out in full. Aging in tanks preserves the fruit’s authenticity, and the use of sulfites is very limited.

In Cheverny, Domaine Tessier, led by Philippe Tessier, consistently cultivates the region's emblematic grape varieties: Romorantin, Sauvignon, and Gamay. The vineyard is managed using organic farming practices, with particular attention paid to the quality of the raw material and soil balance.
