Our Review of the Cuvée

From the first glance, this wine asserts its personality with a dark, translucent garnet hue. On the nose, it expresses a striking freshness with delicate aromas of blackcurrant, cubeb pepper, and a mentholated touch, complemented by a subtle intriguing animal note. On the palate, it reveals a round and enveloping texture, with a velvety mouthfeel and vibrant fruit subtly balanced by volatile acidity. The finish, harmonious and concentrated, does not lack tension, with a progressive ascent of blackcurrant and menthol flavors. A wine that delights with its complexity and freshness.

Languedoc | France

Following extensive experience with Champagne methods, Jean-Louis Denois identified favorable conditions for cultivating Pinot Noir and Chardonnay in certain Languedoc hillsides. Altitude, aspect, and soil composition here provide an ideal environment for the expression of these grape varieties, which are rarely associated with the region.

Vinification favors a measured approach, focusing on freshness and aromatic precision rather than pursuing power. White wines retain a distinct tension, supported by subtle mineral expressions, while reds are crafted with gentle extractions, yielding fine and well-integrated tannins.

Aging processes remain restrained and tailored to each cuvée, aiming to support the wine without dictating its profile. Overall, this offers a balanced and coherent interpretation of these Languedoc terroirs, emphasizing accuracy and clarity rather than a demonstrative approach.
