The winemaking process for this wine is based on an authentic approach that respects the grapes. The Pinot Noir, grown in Burgundy on clay-limestone soils, is cultivated organically. The grapes are destemmed upon arrival at the winery, and fermentation is spontaneous, driven by native yeasts. Thanks to careful punching down and pumping over, aging in Burgundy barrels imparts a delicate structure to the wines.
