Meticulously harvested, the Chenin for our "Pet'Night" is transformed using the ancestral method, offering natural effervescence. Vinification begins with whole-bunch pressing, followed by tank fermentation and a secondary fermentation (prise de mousse) in bottle. The wine benefits from disgorgement in spring, revealing a precise and luminous structure. Perfectly balanced, its complex profile promises an engaging tasting experience.

Our Review of the Cuvée

The initial encounter with "Pet'Night" is marked by its clear golden hue and a persistent stream of fine bubbles. The nose opens with an expressive bouquet of roasted white fruits, warm brioche, and a mineral note of damp chalk. On the palate, its roundness and ample texture are surprising, invigorated by a myriad of sparkling bubbles. The aromatic profile captivates with its intensity and gourmet flavors, while the finish offers a harmonious combination of citrus and green apple, complemented by a spicy and saline touch. A wine that delights with its freshness and complexity.

Domaine Amirault, le Clos des Quarterons

Loire | France

Located in Saint-Nicolas-de-Bourgueil, Clos des Quarterons is a family estate rooted in the region for over 180 years. It is currently managed by Xavier Amirault and his wife Agnès, who cultivate approximately 30 hectares of vines within the appellation's strictly defined area.

The vineyard benefits from a particularly favorable environment: a forest to the north protects the plots from cold winds, while south-facing slopes provide consistent sunshine. The soils exhibit significant diversity, blending gravels, tuffeau directly exposed in the limestone, and deeper areas with a predominant clay composition. This geological variety necessitates precise plot-by-plot management.

The estate is managed using organic farming practices, complemented by a progressively integrated biodynamic approach, with particular attention paid to vine observation and soil vitality. Vinifications are conducted plot by plot to preserve the specific characteristics of each terroir.
