The vineyard, situated on clay-siliceous soil, benefits from a Mediterranean climate with a north-facing exposure, ensuring optimal ripening of the grapes. Sulfur-free winemaking, including direct pressing and cold aging on the lees, reveals a pure and authentic expression of the grape variety. On the nose, it’s a burst of freshness with notes of candied lemon, damp chalk, and a subtle hint of the sea. From the very first sip, the palate comes alive with a sparkling liveliness, reminiscent of a spring stream. Flavors of green apple and lemon intertwine with salty and mineral nuances, amplified by a delicate effervescence that accentuates its liveliness. The dynamic and distinctive finish reveals a pomelo-like bitterness, the acidity of lemon pulp, and a chalky astringency, lingering with hints of candied lemon and cinchona.
