DSM high-altitude wine 2018
Côtes du Roussillon villages | Red | 2018
This wine from Domaine Sous la Montagne, crafted by Sébastien Calduch, is a fine example of the diversity of the Roussillon region. Composed of Carignan, Syrah, Grenache, and Lledoner Pelut, each parcel (La Garrigue, Les Dolmens, Le Camp de l'Argent) is vinified separately using precise methods to preserve the unique characteristics of each terroir, before aging in concrete tanks. This meticulous approach results in a wine with an elegant structure and precise aromas.

Our opinion on the vintage
This vintage immediately reveals itself with its deep, translucent ruby color. From the first sniff, you are greeted by delicate aromas of raspberry, blackcurrant, and white pepper, enriched by hints of violet and incense. On the palate, a smooth, almost silky roundness unfolds with a fine and delicate texture. This elegance is underpinned by a remarkable aromatic freshness where pure fruit blends with subtle spicy touches. The finish lingers with notes of ripe fruit and lightly spiced, toasty flavors, offering an elegant persistence.

Roussillon | France
Jeff Carrel's work in the Languedoc region focuses on vineyards that are sometimes neglected or challenging, revitalized through a pragmatic approach to winemaking. Carignan, Grenache, and Syrah are cultivated according to the specific plots, resulting in wines that are sometimes juicy, sometimes more structured.
The winemaking process remains intentionally simple, in order to preserve the rhythm and character of the wines. Some cuvées prioritize immediate enjoyment, while others emphasize a more assertive structure. The entire range is distinguished by a direct, accessible style, clearly expressing the Languedoc landscape.
