An estate located in the heart of Burgundy in one of the most famous villages of the Côte de Beaune known in France and elsewhere: Pommard!
The winemaker who created this estate in 2012, has inherited the passion of the winemaking profession as he represents the 6th generation of his family.
The grape varieties used on the estate are aligoté, chardonnay and pinot noir spread over 6 hectares in the communes of Pommard, Beaune and Monthelie.
The grapes are harvested by hand and the cultivation practices are always carried out with the aim of protecting the soil and the vines. The estate uses the strength of the Comtois horse to plough the vines, which is in line with the history of the estate.
The estate has indeed chosen biodynamic cultivation by following the lunar calendar throughout the process, from the vineyard to the cellar. A double selective sorting is carried out: first on the vine and then in the winery.
To preserve a broad aromatic bouquet, the grapes must not be stressed and the berry is protected throughout the vinification process.
The irreproachable hygiene of the cellar is necessary since the number of inputs is very reduced, this makes it possible to guarantee wines of a great quality.
The wine is then aged on lees for 12 to 18 months. The juice is kept in oak barrels made by local craftsmen.
Our philosophy and method consists in applying rigorous practices both in the vineyard and in vinification according to the lunar calendar, combining ancestral techniques with modern viticultural sciences, all this work allows us to obtain wines of great aromatic intensity, finesse and elegance.
