Facing the Pyrenees, in the heart of the Cabardès region, you'll find Maison Ventenac . This estate, encompassing 130 hectares of vineyards cultivated and facing due south, proudly overlooks the Cité de Carcassonne. Olivier is at the helm of this estate. After taking over from his father-in-law, he and his wife decided to rethink the estate's winemaking operations. Their goal? To make Maison Ventenac the flagship of the Cabardès appellation by breaking with tradition and redoubling their efforts in innovation!

Unconventional wines for an ambitious winery!

“We are trying to put things back into perspective, to help people rediscover what wines truly are that reflect their terroir. But beware! Not that old, dubious, off-color terroir that reeks of old-fashioned wines!” These are the words of Olivier Ramé. They perfectly capture the passion and quest for the estate's unique character.

The Ventenac winery strives to produce wines with a strong, assertive identity, wines that are undeniably ambitious. That's their philosophy! But all this is far removed from the wine aristocracy, far from the ostentatious luxury that, for them, feels like an insult to their craft. Their wines must remain accessible. They mustn't spoil the pleasure of enjoying a glass of wine by resorting to over-the-top pricing.

To express the aromatic character of their Cabardès grapes as directly and naturally as possible, the Ventenac winery prefers to create single-varietal wines. The wines from Domaine de la Maison Ventenac thus leave a lasting impression; they are true markers of taste.

Modernity, quality: the key to success!

To bring their project to fruition, Olivier and his wife innovate and refine their vineyard cultivation and winemaking techniques. They invest heavily to dramatically improve the quality of their wines. A shared objective guides their work: to respect the land by going even further than the specifications of organic viticulture.

Olivier has released a range of several vintages that express what he believes to be the soul of Maison Ventenac. Here is a small selection of his wines:

-Réserve Jeanne red 2020 : A wine focused on freshness and enlivened by intense red fruit aromas. On the palate, the wine is perfectly balanced, enveloped by fine and elegant tannins.

-L'idiot rouge 2021 : This 100% Merlot is seductive. You can find notes of Morello cherries. It is a delicious, seductive, and precise wine that will age very well for 2 to 4 years.

-Le Paria Rouge 2021 : “Once upon a time, there was an undesirable grape variety planted in our region. Not “ripe enough” for some, “out of place” for others. “Just perfect” in our opinion. These are the words of winemaker Olivier Ramé to describe this magnificent vintage. Le Paria is a wine with a subtle nose that reveals notes of red fruit. On the palate, it offers a beautiful finesse; it’s a true delight.”

Each wine has its own distinct character, free from any artificial embellishment thanks to meticulously controlled aging processes carried out in 2,000-liter casks or even 150- or 500-liter jars. The result? Uncompromising, precise, and direct wines. A knockout punch, but a welcome one! The kind that awakens you. The kind that tells you that not everything is standardized, not everything is uniform, but truly unique!
