The 40-year-old vines used for this Malbec grow in iron-rich limestone soils at an elevation of 350 meters. The grapes are hand-harvested, destemmed, and then naturally fermented for 30 days in concrete tanks. The wine is then aged for 18 months in large oak casks, preserving its complexity while softening its texture. With only 25 mg/L of total SO₂, this wine remains pure and environmentally friendly.

In Cahors, Fabien Jouves manages Mas del Périé, employing a precise plot-by-plot approach to Malbec cultivation.
