This wine is made using natural winemaking methods, with three months of destemmed maceration in stainless steel tanks, followed by six months of aging in a combination of stainless steel tanks, barrels, and large oak casks. The choice of grape varieties such as Gros Manseng, Ugni Blanc, and Muscat of Alexandria, combined with clay-limestone hillside soils, results in a rich aromatic complexity and harmonious balance. Certified organic (AB), this wine reflects an environmentally conscious approach.

Our opinion on the vintage

On the nose, this wine offers an intense bouquet of Muscat, pineapple, and roasted peach, enhanced by floral notes of rose and subtle spices. On the palate, it is both round and fresh, with a fleshy texture that instantly captivates the taste buds. The vivacity is accentuated by a slight effervescence, providing a lovely tension as the acidity of the Manseng mingles with the bitterness of orange peel. The finish is invigorating, marked by a lingering aroma of pineapple, rose, and spice, offering a truly memorable sensory experience.

In Cahors, Fabien Jouves manages Mas del Périé with a precise, plot-by-plot approach to Malbec. The different cuvées are based on the geology of the plateau and hillsides, contrasting limestone soils, which bring verticality and tension, with deeper clays, sources of flesh and density.

Biodynamics structures all the work, from soil management to winemaking. Aging uses a variety of containers—amphorae, foudres, and barrels—employed as tools for adjustment, in order to refine the profiles without masking the expression of the grape or the terroir.

The wines maintain a clear definition, with precise black fruit and structures that are never heavy. The finishes remain legible and balanced, reflecting an approach where each cuvée offers a distinct and coherent interpretation of the different facets of the Cahors plateau.
