The 45-year-old vines, planted in the clay-granite soil characteristic of the Montbrison region, produce a remarkably unique wine. With a controlled yield of 35 hl/ha, each cluster is harvested by hand and vinified as whole clusters, without the addition of sugar. Fermentation uses indigenous yeasts to preserve the authenticity of the aromas. After two weeks of fermentation and aging in stainless steel tanks, this wine undergoes light filtration and measured sulfiting, in accordance with Demeter standards.
