The 45-year-old vines, planted in the clay-granite soil characteristic of the Montbrison region, produce a remarkably unique wine. With a controlled yield of 35 hl/ha, each bunch is hand-harvested and vinified as whole clusters, without the addition of sugar. Fermentation uses indigenous yeasts to preserve the authenticity of the aromas. After a two-week maceration and aging in stainless steel tanks, this wine undergoes light filtration and measured sulfiting, in accordance with Demeter standards.
