Winemaking prioritizes natural methods: direct pressing, nighttime settling, and fermentation with indigenous yeasts. Twelve months of aging in tanks before bottling gives it its unique character and authenticity.

In Gaillac, Domaine Plageoles has been dedicated for several generations to promoting the indigenous grape varieties of the Gaillac vineyards, including Mauzac, Ondenc, Prunelart, and Duras.
