In Coursan, in the southern Aude region, Domaine Ricardelle de Lautrec is nestled in a landscape steeped in history, at the crossroads of La Clape, Minervois, and Corbières. The Via Domitia runs alongside the vineyards, a reminder that this area has been producing wine for centuries. The estate's 50 hectares benefit from a multitude of influences, from the Mediterranean and garrigue scrubland to dry winds, which naturally create a delicate balance.

In 1999, Lionel Boutié, a fourth-generation winemaker, made the demanding choice of organic farming, then biodynamic farming. At the time a fringe practice, this decision proved to be pivotal: the soils regained their life, biodiversity was restored, and large animals and birds of prey returned, becoming a strong marker of the estate.
