Made without added sulfites, this 100% old-vine Merlot is an example of respectful viticulture, thanks to organic farming practices that avoid herbicides and synthetic products. The grapes, hand-harvested at peak ripeness, undergo gentle vinification without excessive intervention, preserving the integrity of the berries. After 10 months of aging in Bordeaux barrels, this wine expresses the unique terroir of the Upper Aude Valley.

Our opinion on the vintage

A translucent garnet robe catches the eye before giving way to a seductive nose, where red and black fruits intertwine with delicately woody notes of toast and roasted coffee. On the palate, the experience is generous and enveloping, with a fleshy texture and subtle tannins that add depth and elegance. Aromas of fresh fruit blend harmoniously with the wood, leading to an invigorating finish marked by hints of blackcurrant, menthol, toast, and spice. A gustatory marvel from Jean Louis Denois, to be savored.

Languedoc | France

After an experience steeped in Champagne-style winemaking, Jean-Louis Denois identified favorable conditions for growing Pinot Noir and Chardonnay on certain hillsides of Languedoc. Altitude, exposure, and soil type provide an environment conducive to the expression of these grape varieties, rarely associated with the region.

The winemaking process favors a measured approach, focused on freshness and aromatic precision rather than the pursuit of power. The white wines retain a marked tension, supported by discreet mineral expressions, while the reds are built on gentle extractions, resulting in fine and well-integrated tannins.

The winemaking process remains restrained and tailored to each vintage, with the aim of complementing the wine without influencing its character. The result is a balanced and coherent expression of these Languedoc terroirs, emphasizing precision and clarity rather than a demonstrative interpretation.
