Limoux
It is in the Aude region that this distinctive appellation produces both still and sparkling wines: Crémant, Blanquette de Limoux, and Limoux wine—the choice is vast! Across 1,400 hectares of clay and limestone soils, the climate is unique. Mediterranean influences are limited by natural barriers to the east, while the oceanic climate from the west has a slight impact. Blanquette de Limoux and Crémant de Limoux are made from Mauzac grapes; the typical grape varieties of the region are Chardonnay and Chenin Blanc. The still red wines are primarily made from Merlot, and prune aromas dominate.
