The meticulous vinification of this wine involves direct pressing, combining destemming and whole cluster fermentation. Controlled fermentation in stainless steel tanks, barriques, and foudres allows the full aromatic complexity of its grape varieties, notably Sauvignon Blanc and Chardonnay, to be revealed. Aged for six months, this wine achieves a harmony of freshness and roundness, further enhanced by its origin from clay-limestone hillsides and its commitment to no added sulfites.

From its brilliant golden hue, this wine immediately captivates. The nose reveals an expressive bouquet of pineapple, butter-roasted peach, and honeysuckle notes, complemented by a subtle smoky undertone. On the palate, it is both vibrant and elegant, structured by a pronounced acidity that highlights a round and ripe texture, reminiscent of biting into a Victoria pineapple. A slight effervescence enhances its dynamism. The finish impresses with its lively tension, noble bitters of candied citrus peel, and an aromatic persistence of pineapple and passion fruit, delivering a bold and refined tasting experience.

In Cahors, Fabien Jouves manages Mas del Périé, employing a precise plot-by-plot approach to Malbec cultivation. The various cuvées are crafted based on the geology of the plateau and hillsides, contrasting calcareous soils, which impart verticality and tension, with deeper clay soils, which contribute body and density.

Biodynamic practices underpin the entire process, from soil management to vinification. The aging process utilizes various vessels—amphorae, foudres, and barriques—employed as fine-tuning tools to refine the profiles without obscuring the expression of the grape or the terroir.
