Our Review of the Cuvée

This Sémillon wine is a delightful discovery to pair with your meals. Its pale yellow color hints at fruity and citrus notes on the nose, offering a lovely freshness on the palate. Located on the Cérons plateau, in the historic heart of the Graves region, Domaine du Salut has been run by Aurélia and Frédéric since 2015. The vineyard is planted on sandy-gravel soils—which drain very well—formed from the former bed of a tributary of the Garonne River, with a nutrient-rich subsoil and naturally high biological activity.

As soon as they settled in, the couple adopted a structured environmental approach. The white wine plots are planted with cover crops (oats, vetch, clover) to enrich the soil with organic matter and promote natural nitrogen fixation, which contributes to the grapes’ aromatic development. No herbicides are used: soil management prioritizes traditional mechanical practices adapted to the nature of the plots. The estate has been Terra Vitis certified since 2015 and converted to organic farming as of 2020.

The harvest is mostly mechanical, with the exception of the sweet wines, which are harvested by hand to ensure careful selection of the grapes. The choices ... Read more
